Pumpkin Bread

2 tbsp flax meal + 6 TBSP water for “egg” base
1 box of Fämily Foods Pancake & Baking Mix
2 tbsp ground cinnamon
3/4 tsp nutmeg
3/4 tsp pumpkin pie spice
1/2 tsp salt
1/3 cup light brown sugar
1/3 cup water
1 can pumpkin puree
minced ginger
Preheat oven to 350 degrees
Grease baking loaf pan

Mix together flax meal “egg” first and let rest for 10 mins in a separate small bowl
After resting, mix wet ingredients (including flax “egg”) in a bowl.In a separate bowl, mix dry ingredients.Slowly add dry ingredients to wet, 1/3 cup at a time
Pour into loaf pan and bake at 350 for 60-75 mins
