HOLIDAY GINGERBREAD LOAF

/4 cup coconut oil, 3/4 cup brown sugar, 1 1/3 cup plain yogurt (we love coconut yogurt!), 1/2 cup water, and one Holiday Baking Mix. Want some extra spice? Add 4 tbsp molasses. Stir all ingredients until just combined, then pour into pre-greased loaf pan. Bake at 350°F/177°C for 50-60 minutes or until toothpick comes out clean. Let cool before removing from pan. *Makes one 9x5 loaf
